The ISP sets up all the accounts on the mail server. The password is encrypted and cannot be viewed or copied.
However, the mail administrator and/or help desk can usually change the password and gain access. You would know about this as you would receive an authentication error when you tried to access your email.
The ISP may ask you for a password when your mail account is set up but there is an option to change it after you have logged in for the first time. You are risking unauthorised access to your account if you don't change it.
The ISP will also be monitoring and recording all web traffic and will therefore be able to view the header details if support wants to.
But if your mail account is hacked, the culprit is unlikely to be your ISP.
