FileVault is built in to Tiger and Leopard. Its the most powerful encryption tool ever. one downside: it vaults your whole system.

What you can do as a free resource is create an encrypted sparse disk image using Disk Utility. Then you just mount it, put in your password whenever you want to use it, save files to your 'disk', then eject it.
This works well for me…
FileVault is also built in, but indeed wants to vault your whole system.
As an actual software application, there's Cryptix and you can check this site out to review:
