The laptop that had McAfee on it has completely stopped working and I’ve replaced it with a new one. I’m wondering how I can cancel my subscription, so I don’t have to pay for something I’m not even using.

call them ,they probably have a toll free number you can get from their website

with any antivirus software, you prepay for the subscription. and because of this, you will not receive a refund of your purchase price.
if you simply uninstall it you are technically cancelling your subscription.

My suggestion is to contact McAfee and have them walk you through removing all traces of the software.
This will include Start, Run, Rgedit, and they will give yothe files that need to be completely removed, besides Add & Remove Programs, that only removes a portion of the software.
