Depending on what Internet browser you use, and what version (IE 6, 7 or 8 beta) it will look slightly different but still the same essentially.
In most cases the address bar of your browser will have a padlock symbol or similar which you can click on and read the security in place. Providing the site has security.
Try it with a site you know does, such as a banking site (go to login) and it should occur to know what you are looking for.

If the address starts with https:// rather than http:// it’s a good sign.

You can, and can’t at the same time.
You can know if their server is secure (the ‘https://”) which essentially says that the server is who it says it is; but as far as the internal security & safeguards of the organization you’re dealing with; it’s a matter of trust.
