I’ve got a few programs I was trying out and don’t want anymore, but when I go to "Uninstall/Remove Programs" they don’t appear there, even after searching. (This is Vista Home Basic.) I’m told that it’s bad to remove programs without uninstalling first because it leaves ‘holes’ in the computer’s memory, is that right? I don’t want to mess up my computer but I need that memory space back. Can I just delete them outright?

If the program was installed, it installs an entry in "Uninstall". Some programs don’t install, they just run. They can be deleted. If you delete an installed program, you can’t delete the other programs it installed, and the registry entries it made.
No, nothing leaves holes in the computer’s memory from deleting files on the hard drive. One has nothing to do with the other. Only badly-written programs leave holes in memory, and only until you turn the computer off. (Memory is wiped clean every time the computer is turned off, unlike the hard drive, which keeps programs until they’re deleted. (Removing an installed program also deletes its files - including the file needed to remove it. Deleting the program’s files does that too - so you can’t remove it properly.)

deleting programs has little thing to do with your memory,but it does cause malfunction of your system if you have an unclean deletion. it is truth that you should try to unintall not delete programs. It is safe
But you may not uninstall it completely.
You can yse ErrorFix to remove those program, it can safely scan and detect those programs do not option to uninstall.
It never remove system program.
