I’ve currently got a University project in which we’ve been asked to use wifi monitoring software to see local wireless networks and monitor their status and stats such as “secure” or “unsecured”, signal strength, router/network name etc.
I would like either some free to try or shareware software which does all these, similar to Apple’s AirPort which does the above. Exporting graphs of this data would be useful but not essential.

Except for the graphs, your operating system already has an application to do it.
I’m not entirely sure what variables you would use on the axes of the graph, but it is not likely that an application would be ’smart’ enough to graph access points for you.
Lots of computer/wireless NIC manufacturers also create their own tools for managing wireless connections. They often have more detail that the operating system’s utility. You may want to check the website of your computer manufacturer to see if they have a wireless tool. If not, then find the brand of your wireless NIC, and check their website.
