You probably are running a program that suffers from memory fragmentation. Even if a program necessarily doesn't need the memory it requested earlier, it still can't free it up to be reallocated properly. This means the next time it needs more memory, it ends up using even more then before. Firefox 2 suffers from this problem after running for a long time continuously, and some BitTorrent clients are especially bad at it.
The best solution would be to close all running programs and restart them periodically.
